 Bruksområde:

RIDASCREEN® FAST Gliadin er en sandwich enzyme immunoassay (Elisa) for kvantitativ ananlyse av prolaminer fra hvete (gliadin), rug (secalin) og bygg (hordein) i næringsmidler.

RIDASCREEN® standard materialet er kalibrert etter standarden til "the Prolamin Working Group".

 

 Generell informasjon:

Bruken av hvetemel og gluten I næringsmidler er ekstremt vanlig på grunn av deres varmestabilitet og bruksegenskaper som for eksempel. Tekstur, vannbindende evne og smak. Gluten er en miks av prolamin og glutelin proteiner tilstedeværende i hvete, rug og bygg.
Cøliaki er en permanent intolerance mot gluten som resulterer i skade på den lille tarmen og er reversible når gluten unngås i dietten.
I dokumentet Codex Alimentarius (Alinorm 08/31/26) er gluten frie næringsmidler definert som mat som har et gluteninnhold mindre enn 20 ppm. Det er differensiert til produkter, som har blitt spesiellt produserte for å redusere glutennivået til et nivå over 20 opp til 100 mg/kg totalt.

Cross-reactions:

The monoclonal antibody R5 reacts with the gliadin fraction from wheat and corresponding prolamines from
rye and barley.

No cross-reaction with oats, corn, rice, millet, buckwheat, quinoa and amaranth.
