Isocitrat er en del af citronsyrecyklussen og findes derfor i alle dyre og planteceller. Koncentrationen er undernormale omstændigheder meget lav.

I juice og specielt appelsinjuice er det vigtig at bestemme indholdet af isocitrat, da isocitrat er et mål for koncentrationen af appelsin i juicen. Som regel måler man forholdet mellem citronsyre i forhold til koncentration af isocitrat. Er forholdet for højt indikerer det at juicen er beriget med citronsyre. Saft og andre drikkevarer tilsat appelsinjuice testes også for indholdet af isocitrat, hvor koncentrationen af isocitrat kan bruges til at teste om der er den mængde appelsinjuice som angivet på produktdeklarationen.
